Aurora Muffin

Aurora is a friend from Brazil. At the end of the 1970s we thought we would open a catering at some point. We didn’t do that, but we have great party recipes. Here is our first muffin recipe.

Ingredients

  • 100 grams of margarine (room temperature)
  • 230 grams of flour 405
  • 120 grams of sugar (baking sugar is best)
  • Vanilla essence (or vanilla pods)
  • 180 ml of milk
  • 1 packet of vanilla sugar
  • 1 glass of rum flavor
  • 24 raspberries (two per muffin)
  • 2 eggs
  • 1 teaspoon of baking powder

Preparation

  1. Beat the margarine and sugar until creamy.
  2. Add vanilla sugar and continue to stir.
  3. Gradually stir the eggs into the mixture.
  4. Mix the flour with the baking powder and add a small portion.
  5. Then add a portion of milk.
  6. Mix in the rest of the milk and flour alternately.
  7. Fill the dough with raspberries in the molds. Place the raspberries in the middle if possible.
  8. Bake in a preheated oven for 25 to 30 minutes at 180 degrees.
